Easy Backpacking Meals – Veggie Couscous

  •  1 – 5.8 oz box Near East Roasted Garlic and Olive Oil Couscous and flavor pack
  • 1/4 cup freeze dried mushrooms
  • 1/2 cup freeze dried peas
  • 1 tsp chia seeds
  • 1/2 tsp red pepper flakes
  • salt to taste
  • 1 tbsp olive oil
  • 1/2 cup soy curls (will need to be reconstituted in separate bag)
  • Optional:  freeze dried red pepper or tomato


Directions At Home:

  1. Put soy curls into small freezer bag
  2. Put all other dry ingredients into larger freezer bag
  3. Put olive oil into separate small bottle


Directions At Camp:

  1. Warm some water and add to your soy curls bag.  Does not need to be boiling water. Curls will take approximately 10 minutes to reconstitute.  They become soft/smooshy when done.
  2. Bring 1 1/2 cups water to a near boil
  3. Add near boiling water to your freezer bag with the dried couscous mix and seal bag  
  4. Let bag sit for 5 minutes
  5. Turn bag upside down a few times, mixing ingredients
  6. Allow to sit for 5-10 more minutes or until all ingredients are rehydrated
  7. Stir in the soy curls and olive oil and enjoy!
