Peanut Butter Banana Chia Seed Pudding

A typical backpacker’s breakfast usually consists of oatmeal or a meal bar of some sort.  If you are looking for something different to try for your backpacking meals, this recipe might just be for you.  I like having chia pudding for breakfast because it fills you up like oatmeal.  There are so many possibilities with these seeds.  You could add fruit, coconut, nuts, seeds, or cacao powder to create all sorts of combinations.

Chia seeds are tiny but have big nutrients.  They are a complete protein, meaning they have all essential amino acids that our body needs to function.  Chia seeds are also high in omega 3s and fiber.  To learn more about the benefits of chia, check out my article, The Top 10 Benefits of Chia Seeds.

 

Peanut Butter Banana Chia Seed Pudding

Ingredients:

  • 1 1/2 Tbsp chia seeds
  • 1 1/2 Tbsp powdered milk or coconut milk
  • 1/2 cup water
  • 1/4 cup Peanut butter
  • 3 spear shaped slices dehydrated/dried bananas (not banana chips) or 1/4 cup round slices

Directions:

  1. Soften your bananas by simmering them for about 10 minutes on medium heat with just enough water to cover them.  If you have a narrow cookpot (mug shaped) I suggest chopping them prior to heating and then adding just enough water to cover them
  2. Reconstitute your milk or coconut milk by adding water to powder and mixing
  3. Add chia seeds to milk and let sit for approximately 10 minutes, chia will become gelatinous
  4. Add peanut butter to chia seed mix and stir
  5. Chop your cooked bananas, add to chia mix and stir
  6. Add optional ingredients and stir
  7. Enjoy!

I was able to find dried bananas at my local health food store but if you are having trouble finding them in your area, these are available on Amazon.  You can also use freeze dried bananas and add them as they are or soak them in water for a few minutes to soften.  Another idea for this recipe is to use the powdered peanut butter.  I’ve not tried it but it sure would save some weight if you plan to have several days worth of this breakfast.
